custom theme without theme roller

is there a doc how to create a custom theme by just editing sass variables or a list of all the css3 variables that can be used inside :root{…} ?

There’s no documentation on that. Your best bet might be to have a look at the theme roller source code https://github.com/OnsenUI/theme-roller
